Sustainability Initiatives Every Day.
Sodexo Campus Dining Services at Marquette University...
- Trayless Dining in conjunction with Marquette University RHA we now offer this important initiative. This is one significant initiative that helps minimize waste as well as water and energy usuage while creating a more sustainable food service operation.
- Donates extra food to the Marquette University Campus Kitchens Project, accounting for over 65 percent of their food donations. The food is used to serve over 14,000 meals to the hungry in our community over the year.
- Has a Full Washable China program serving 3,500 students daily in the residence hall dining rooms
- Uses Eco-Friendly Napkins - (Earth Plus Natural Brown Napkins), 100% recycled, bleach free process
- Provides environmentally friendly paper products
- Utilizes Ecolab Green Cleaning products and dish soap
- Purchases produce locally and regionally when feasible (4 months out of the year due to growing season)
- Purchases potato products from McCain Foods - a Wisconsin Company, with potatoes grown and processed in Wisconsin
- Purchases milk products from Kemps Dairy (regional dairy)
- Purchases and sells Stone Creek Coffee (socially responsible, local roaster)
- Sells re-usable, sustainable coffee mugs at the Brew Cafes across campus and offers refill deals with the mug (sold over 5,000 so far this school year)
- Opened Natural Smart Market at AMU, providing over 70% natural and/or organic products, also selling Palermos Pizza (local and organic) and other sustainable products from United Natural Foods
- Installed a water hydration station in Natural Smart Market, serving purified water in biodegradable plantware cups and re-usable stainless steel canteens, in an effort to decrease the numbers of plastic water bottles in landfills.
- Will offer "spudware" and biodegradable, plant based drinking cups on a request-basis for catering events beginning July 1, 2009
- Provides used cooking oil to a bio dieselfuel processing plant near Madison, WI
- Has its own on-campus Bakery, located on 17th Street, with no distance shipping of product. Also, the selections prepared in the bakery are made fresh, from scratch.
